1. First of all peel the carrot and wash it well and grate it.

2. Heat ghee in a pan on medium heat and add grated carrots to it, stirring it well with a spoon, cover and cook for 5 minutes.

3. After 5 minutes, open the lid and add sugar and mix it and cook again covered for 3-4 minutes.

4. After 4 minutes open the cover. A lot of juice has come out of the carrot, cook it like this in the open with a spoon, stirring occasionally, until the juice gets reduced.

5. When the juice is reduced from the carrot, then add milk to it and cook the halwa until it becomes thick, stirring continuously with a spoon.

6. Lower the flame of the gas and cook the grated khoya (mawa) in a pan or kadai on medium to low flame, stirring continuously with a spoon, till the khoya melts and its color changes slightly.

7. When the khoya is roast, put it in the carrot pudding and cook it for 2 minutes while stirring continuously with a spoon and turn off the gas.

8. Roast cashew-almonds in the same pan in which the khoya is roasted for 2 minutes.

9. Add roasted cashew-almonds, cardamom powder and vanilla essence and mix well.
